Cherry Pie Tassies

Valentine’s Day is one of my favorite holidays. These days, between smart phones and emails, work events and school functions, it’s rare to find a few moments in each day to gather and connect with the people we love, sans distractions.

With all the craziness in our day-to-day lives, I love taking the opportunity around this time of year to escape the noise and create an elegant, romantic meal for my husband and me to share. I usually opt for something hearty and simple, and my favorite way to top off the meal is with these delicious Cherry Pie Tassies. Bursting with the flavor of tart cherries, and balanced by sweet, sugary glaze and buttery pie crust, these two-bite treats are the ultimate indulgence, and they’re light enough to leave you feeling satisfied, instead of overfull.

With just 7 ingredients (most of which you probably already have in your kitchen), this recipe is specifically designed to be as simple as it is delicious, so that you can spend less time in the kitchen, and more time connecting with the person, or people, you love.

2 recipes SB Pie Dough 4 cups fresh or frozen and thawed sour cherries, pitted 1 cup granulated sugar ¼ cup cornstarch ½ cup powdered sugar 1 cup heavy cream ½ teaspoon vanilla

 

 

Instructions:

1.) Preheat oven to 375 degrees. Grease 1 (24-cup) mini-muffin pan.

2.) Roll out dough into 2 (12-inch) circles. Cut 24 (3-inch) circles with a biscuit cutter. Press the dough circles into each muffin cup and place in the freezer for 20 minutes.

3.) Combine cherries, sugar, and cornstarch in a bowl and mix until well-combined. Remove muffin pan from freezer and fill with cherry filling. Bake for 30 minutes, or until crust is golden brown. Remove from oven and set aside to cool.

4.) Combine the powdered sugar, cream, and vanilla in a saucepan over medium heat and bring just to a simmer. Remove from heat. Once tassies are cooled, remove from pan and drizzle icing over top. Serve immediately.

Makes: 24 Tassies

Pairs well with: Top your tassies off with homemade whipped cream, or pair them with our no-churn vanilla ice cream for a dessert you won’t soon forget!
