Apple-Raisin Tarts

Ingredients:
1 cup raisins
1/4 cup rum
2 recipes SB Pie Dough (see below)
3 Granny Smith apples
2 Golden Delicious apples
1 teaspoon lemon juice
2 tablespoons brown sugar
1/8 teaspoon nutmeg
2 tablespoons granulated sugar
3 tablespoons butter, cut into small cubes
1 cup apricot jam
1 teaspoon vanilla
Instructions:
Preheat oven to 400 degrees. Soak raisins in rum while preparing the tarts.
Roll out the dough into 2 (12-inch) circles. Cut 4 (5-inch) circles our of each round to make 8 in total. Mold into individual (4-inch) round tart pans.
Peel apples, cut in half, and remove core and stems. Cut apples into 1/4-inch slices. Place in a bowl and toss with lemon juice; set aside.
Sprinkle the bottom of each tart shell with brown sugar. Arrange apples, overlapping in a circular pattern, in the tart pans. Mix nutmeg and sugar together and sprinkle over the apples. Dot tops with butter. Place tart pans on a parchment-lined baking sheet and bake for 40 minutes.
Heat jam, vanilla, and rum with soaked raisins in a small saucepan. Bring just to a boil. Remove from heat and spoon over the top of the tarts.
Serve hot with homemade whipped cream or vanilla ice cream.
Southern Baked Pie Dough
Ingredients:
8 tablespoons (1 stick) unsalted butter
1 ¼ cups all-purpose flour
½ teaspoon salt
½ teaspoon granulated sugar
¼ cup water
Instructions:
Makes dough for 1 single-crust 9-inch pie
1.) Cut the butter into small cubes. Combine butter and flour in a mixing bowl. Using a pastry blender, work the butter into the flour. Add the salt and sugar. Continue to work the butter into the flour until the mixture has a consistency of coarse-ground cornmeal. The cubes of butter should now be smaller than the size of a green pea.
2.) Add the water all at once. Continue to work the dough until the dough begins to come together. Form the dough into a ball, wrap with plastic wrap, and press into the shape of a disk. Place in the refrigerator for 2 hours to chill.
3.) Remove dough from refrigerator and roll out to desired size on a lightly floured surface.
